Simple coconut milk curry chicken recipe.

I posted photo of this simple light meal - curry chicken with coconut milk on my   Facebook and   Instagram and I got many emails and comments so I promised I will share it on my blog. Last week my boyfriend came back from away game at about 2 am and I was just finished working around the house and had a late night inspiration to make this, as it doesn't take to much time and not at all many ingredients + I love everything with coconut in it! My kitchen smelled heavenly (of coconut) while I was cooking.

This is the   recipe I used as a base, but I changed it a bit as it wasn't salty enough and I like my onions sliced much thinner.

It takes about 15 minutes to prepare it and 45 min to cook it (rice included).
It's enough for 3 people, in my home for two of us only. :)

First I cooked a coffee cup of basmati rice in two coffee cups of water with a pinch of salt and a drop of olive oil.

It takes only few ingredients to make this meal!


4 boneless chicken thighs
1 (236 ml) cup of thin sliced onions
1 potato cut into small squares
5 cloves of garlic 
1 can of coconut milk (13.5 oz / 400 ml)
2 tbsp of curry powder
1 tbsp of cumin (powder spice)
2 tablespoons of butter
Olive oil
Salt, as desired


1. Slice onion and garlic into thin slices, cut chicken and potato into small cubes.
2.Melt butter in wok or large saucepan and add curry and cumin powder to it, mix it on low heat so it doesn't burn. Add coconut milk to it and shimmer on low heat until you complete steps 3 and 4.
3. Saute garlic and onion on olive oil in a separate saucepan, when softened add chicken and potato (cut into cubes).
4. Once chicken is cooked (turns white) add some salt (I also add half a spoon of Croatian spice called Vegeta) add the mix of chicken, garlic, onion and potato to coconut milk mix and shimmer on high heat until it boils (8-9) and then turn to medium heat (6-7), cover and cook for about 30 minutes. Check on potato and chicken if done.
