Fabulous ground beef & vegetables pie recipe.

After couple of email and  Facebook messages after posting a photo of ground beef and vegetable pie I made on a night my boyfriend had a late away game so he flew back just around 4 am. I really wanted to make sure he eats something healthy and warm so I started making it around midnight (I know, I am crazy), I know I wouldn't be able to fall asleep anyways, so I used this time to try something new.

Anyways, this was about ten days ago, I made it again yesterday before traveling to Budapest and added some things to recipe. This pie can last for couple of days in the fridge so you can just take one or two pieces at a time, warm it up and eat with soup or salad. On top, it is really easy to make. If I can make it, you can make it as well for sure! :)





INGREDIENTS:

450g/1 Ibs ground beef or mixed meat
1 can or half bag of frozen mixed vegetables (peas, carrots, potatoes, corn)
1 large onion chopped on small pieces
3 cloves of garlic finally chopped
1 large pepper cut into small pieces
salt and paper (one tea small spoon each)
2 teaspoons of ground cumin 
1/2 teaspoon of cinnamon
200 g/ 1/2 Ibs beef chunks 
2 packs of refrigerated pie dough (regular dough/as used for pastries) 
100 ml/6-10 soup spoons of tomato sauce
1/2 cup of yellow/golden raisins (optional)
1/2 cup of chopped green olives (optional)

PREPARATION:

1. Preheat oven to 220 C/ 435 degrees F. 
2. Heat vegetable or olive oil (2 soup spoons) in a large deep skillet over medium heat. Add onion, garlic, peppers and a pinch of salt and peper (I also add some oregano and Croatian spice mix Vegeta) cook while stirring occasionally until lightly browned. 
3. Cook frozen vegetables mix separately for 10 minutes, drain and add to the browned onion, garlic and peppers, stir it together and add tomato sauce, cumin and cinnamon and cook until thicken for 5 minutes on medium heat.
4. Push vegetables to one half of the skillet and add ground beef on the other side, season the meat with salt, pepper (I add Vegeta) and increase the heat to high and cook until the meat is browned on one half of skillet, then stir it all together for 3 minutes and just add olives an raisins 2 minutes before turning it off.

Now, original recipe saids to put this mixture on the oiled 9 inc. baking dish and just cover with dough on top, I prefer a 'real pie'.

5. Oil the 9 inc. round pan (I use the same rounded one in which I bake Quiche Lorraine) and roll over one of the two pieces of dough over it, press on and over the edges and stab it all around and on the sides with a fork to allow the air to circulate. Add the filling on top and spread evenly. Cover the filling with second sheet of dough and press on the edges (one piece of dough on the other) with a fork (to create this mini stripes all around) and cut the cross in the middle to allow the air in. 

6.Beat one egg and 2 soup spoons of warm water for egg wash and use a brush to spread it around the pie.
7. Place the pie in the oven and bake on 220 for 15-20 minutes or until golden brown.
